除去果皮,干燥后即是红莲子,红莲子经过加工去皮后就成为白莲子。从营养成分上看,红白莲子相差无几,都富含人体所需的蛋白质、碳水化合物及钙、磷、铁及多种维生素等营养元素,是老幼皆宜的食品;从药用角度来看,莲子具有补中益气、养心益肾、镇静安神、健脾养胃等功效,可用于体质虚弱或病后产后脾胃虚弱、心烦易怒、失眠多梦,食欲不振以及妇女血虚腰酸、白带增多、男子肾气虚之遗精等病症,红莲子更多用于补血养颜,而白莲子则在补气上稍胜一筹;口感上白莲子煮后软而糯,清香可口,红莲子则不易煮烂,肉质较硬且稍涩。
