翔鹰商用洗碗机主要由微电脑控制系统、清洗系统、漂洗系统、不锈钢机架组成。
翔鹰商用洗碗机由不锈钢水泵将洗涤水从水槽中抽出加压并循环使用，水槽内的水温温控器控制在55±5℃。在洗涤过程中洗涤篮固定不动，上下洗涤臂由洗涤水推动旋转．这种方式的优点在于洗涤臂可从各个角度对碗、碟进行清洗，不存在死角，保证了洗涤质量。洗涤程序完毕后是漂洗程序，漂洗臂喷出摄氏85±5℃的高温净水(洗杯时温度控制为65C)，上程序的漂洗水作为下次的洗涤水用，从而保证了洗涤水的清洁性．漂洗时，用分配器自动加人催干剂，能迅速挥发餐具表面水分，不留痕迹，并起到消毒的作用．
