肉丸成型蒸煮流水线由部分组成,即成型与蒸煮部分、冷却部分、传动系统部分。 成型槽与蒸煮槽的水经两槽内蒸汽管道加热,水温用高温高压阀通过调节蒸流器控制,达到成型槽的水温约75度,蒸煮槽水温为90度左右。成型槽内的水通过热水循环泵形成水流,使从肉丸机出来的肉丸入水后便开始向成型槽末端流动,这一流动过程通过调节阀控制水的流速达到控制肉丸流动速度的目的,即按工艺使肉丸达到理想的成型状态。
成型后的肉丸需在蒸煮槽的进一步蒸煮后通过旋转的拨板匀速地移动到蒸煮槽末端。不同品种肉丸蒸煮所需时间可通过调节拨板的转速来控制。
通过链条传动到冷却槽内的肉丸须在冷却槽内迅速冷却,冷却槽内的水为开放型的,即进入冷水而溢出热水已达到冷却槽内水温始终在20度-25度左右。肉丸在冷却槽内冷却后可直接进入速冻车间挂冰冷冻。
