性  质：
白色至浅褐色结晶粉末，或微乳白色针状结晶。无臭，微有苦味，水溶液无味。PG难溶于水，微溶于棉子油、花生油、猪脂。其0.25%水溶液的PH值为5.5左右。没食子酸丙酯比较稳定，遇铜、铁等金属离子发生呈色反应，变为紫色或暗绿色，有吸湿性，对光不稳定，发生分解，耐高温性差。
