甘油是重要的有机化工原料，在国民经济的许多部门被广泛应用。

它是优良的吸湿剂、抗冻剂、润滑剂、溶剂及助溶剂，是生产聚酯、医药等的重要原料。

在食品工业中，可用作保水剂、载体溶剂、稠化剂、增塑剂；在着色食品中可用作载色剂。甘油还可以用作食品加工和包装机械的润滑剂。

在药物和化妆品制造中常用作软化剂、黏度改进剂和溶剂。

在高分子材料中，甘油常用于生产聚氨酯泡沫塑料、聚醚等的原料，是生产醇酸树脂和赛璐珞的重要原料，特别在制造醇酸树脂漆中的需用量很大。

在烟草工业、陶瓷工业、皮革工业、木材工业及照相等方面也都有广泛的应用。
