可可粉(cocoa powder)是从可可树结出的豆芙(果实)里取出的可可豆(种子),经发酵、粗碎、去皮等工序得到的可可豆碎片(通称可可饼),由可可饼脱脂粉碎之后的粉状物,即为可可粉。可可粉按其含脂量分为高、中、低脂可可粉;按加工方法不同分为天然粉和碱化粉。可可粉具有浓烈的可可香气,可用于高档巧克力、冰淇淋、糖果、糕点及其它含可可的食品。
