铁是血红蛋白、肌红蛋白、细胞色素酶等多种氧化酶的成份，与造血机能、氧的运输及细胞内生物氧化过程有着密切的关系。动物缺铁时，肝细胞和其他组织细胞内的线粒体和微粒体异常，细胞色素C含量下降，蛋白质合成和能量利用受阻，动物出现贫血,毛发干燥，皮肤粗糙,体重下降。
