I+G,是二种调味剂结合取开头英文字母的简称。即5′肌苷酸钠—IMP(DISODIUMINOSINE5’—MONOPHOSPHATE)和5′鸟核酸钠—GMP(DISODIUM GUANOSINE5’—MONOPHOSPHATE)各50%。
若肌苷酸钠和鸟苷酸钠的比例为1∶1时,其一般用量如下:罐头汤,0.02-0.03 g/kg;罐头芦笋,0.03-0.04 g/kg;罐头蟹,0.01-0.02 g/kg;罐头鱼,0.03-0.06g/kg;罐头家禽、香肠、火腿,0.06-0.10 g/kg;调味汁0.10-0.30 g/kg;调味品,0.10-0.15;调味番茄酱,0.10-0.20 g/kg;蛋黄酱,0.12-0.18 g/kg;小吃食品,0.03-0.07 g/kg;酱油,0.30-0.50g/kg;蔬菜汁0.05-0.10 g/kg;加工干酪,0.05-0.10g/kg;脱水汤粉,1.0-2.0 g/kg;速煮面汤粉,3.0-6.0 g/kg。
