Lemon Blueberry Waffles
These wonderful light, crisp waffles seem to add some sunshine and cheer to ever the darkest, grayest morning. The lemon flavor is clean and bright, with the blueberries adding the right amount of color and moisture.
1 cup all-purpose flour 1 1/2 cups milk
1 cup whole wheat pastry flour 1/4 cup fresh lemon juice
3 teaspoons baking powder 1 teaspoon vanilla extract
1 tablespoon granulated sugar 1/4 cup olive oil
1/4 teaspoon salt 1 1/2 cups fresh or frozen blueberries (if frozen
3 egg, separated allow to thaw)
Grated zest of one lemon (about
1-1 1/2 teaspoons)
Preheat waffle iron according to manufacturer’s directions.
In a large bowl, whisk together flours, baking powder, sugar, and salt. Make a well in the center.
Using an electric mixer, beat the egg whites until soft peaks from. Set aside.
In another bowl, combine egg yolks, lemon zest, milk, lemon juice, vanilla, and olive oil. Using the mixer, beat until smooth.
Add the wet mixture to the dry and using the mixer again, beat until well combined. Gently fold the blueberries and egg whites into the batter.
Spray waffle iron with cooking spray and spoon about 3/4 cup to 1 cup of batter into iron. Cook about 5-6 minutes or according to the manufacturer’s instructions.
Be sure to spray the iron with cooking spray between batches.
柠檬蓝莓松饼
1杯通用面粉 1/2杯牛奶

把烹饪喷雾加到华夫饼磨具,并同时加入3/4--1杯左右的面糊到华夫饼磨具。
根据制造商的说明,大约煮5-6分钟。
一定要在华夫饼磨具的两边喷上烹饪喷雾。
