豌豆黄是北京传统小吃,同芸豆卷一起传入清宫,因慈禧喜食而闻名。其制法较精,是将豌豆煮烂过筛成糊,加上白糖、桂花,凝固后切成两寸见方,不足半寸厚的小方块,上面放几片蜜糕,色味俱佳,质地细腻纯净,入口即化,属上品。宫里吃的时候通常装在精致的盘子里,还点缀以金糕,红黄相间。而沿街叫卖的通常加小枣,整块出售。豌豆黄颜色浅黄,细腻凉甜,入口即化,老幼皆宜,是夏季的消暑佳品。同时,豌豆黄还具有降血压的作用。《燕都小食品杂咏》中有诗云:“从来事物有燕京,豌豆黄儿久著名,红枣都嵌悄里,十文一快买黄琼”。
豌豆黄功效:
豌豆利小便、止渴,和中下气,解疮毒,消炎,去除暑热,有降血压、除脂肪、减肥之功效。
