Age Of Vines 98 YEARS/ Vineyards planted in 1919 Yield 4.0 tons/acre Maceration 72 hours of Pre-fermentative cold maceration and 10 days of post-fermentative maceration at 28ºC. Fermentation Fermentation with native yeasts at a temperature of 24-26ºC. During this process, the maximum temperature was 28ºC and the total time of fermentation was of 8 days. Aging The wine was aged in new French oak barrels for 6 months. Later on, the wine remains in the bottle for at least 6 months more.
