Yield 1.6 tons/acre Maceration 7 days of Pre-fermentative cold maceration and 20 days of post-fermentative maceration at 28ºC to get the maximum extraction of the grapes good tannins. Fermentation Fermentation with native yeasts at a temperature of 24-26ºC. During this process, the maximum temperature was 28ºC and the total time of fermentation was of 6 days. Ageing The wine was aged in new French oak barrels for 18 months. Later on, the wine remains in the bottle for at least 12 months in order to be at its best when reaching to consumer.
